Researchers Jekaterina Martynova and colleagues have made significant contributions to the fields of microbial fermentation, biotechnology, and probiotics. Their work on Zymomonas mobilis mutants has enhanced stress resistance to hydrogen peroxide, paving the way for improved production processes. The translocation of pyruvate decarboxylase to the periplasmic compartment enables the production of acetaldehyde outside the cytosol, expanding biotechnological possibilities. Furthermore, they have explored the use of sweet and acidic whey as substrates for probiotics biomass production, highlighting its potential for sustainable applications. Additionally, their model-based analysis has assessed the biotechnological potential of Kluyveromyces marxianus central metabolism and identified novel pathways for lactose bioconversion using non-conventional yeasts.
