Reiko Nagasaka
Tokyo University of Marine Science and Technology
Reiko Nagasaka's research has made significant contributions to various fields, including nutrition, endocrinology, and biochemistry. Studies on dietary docosahexaenoic acid in zebrafish and leptin's role in fat preference during low-temperature acclimation have provided insights into the importance of omega-3 fatty acids and hormonal regulation. Research on vitamin D levels in Canadians of South Asian and European ancestry has shed light on disparities in health outcomes. Nagasaka's work also explores the effects of ergothioneine-rich mushroom extracts, γ-oryzanol, and phytosteryl ferulates on lipid oxidation, inflammation, and adiponectin levels. These findings have implications for cardio-metabolic disease prevention, vitamin D supplementation, and the development of novel therapeutic agents.
