Zhiqiang Jin has made significant contributions to various fields of study, including food science, biotechnology, and materials science. Research on modified oil palm kernel expeller fiber enhanced via enzymolysis combined with hydroxypropylation or crosslinking led to improved heat-induced egg white protein gel properties. Investigations into banana starches at different maturity stages revealed physicochemical changes and in vitro digestibility. Studies on mapho1, polydopamine-pd nanozymes, and transcriptional regulation during postharvest banana ripening provided insights into starch degradation, antioxidant activity, and ethylene synthesis. Additionally, research on blockchain technology application, rice seed germination, and banana somatic embryogenesis explored the intersection of biotechnology and finance. These studies have expanded our understanding of starch properties, plant stress responses, and novel biomaterials, offering potential solutions for food security, disease management, and industrial applications.
